Description

Ingredients

  • 2 tablespoons avocado oil (or olive oil)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • ½ medium yellow onion, sliced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • Juice of 1 lime
  • Optional: lettuce leaves or low-carb tortillas for serving
  • Optional toppings: sliced avocado, sour cream, shredded cheese, fresh cilantro

Instructions

  1. Prep the Steak: Start by slicing your steak thinly against the grain. This is key for tender bites. Place the steak strips in a bowl and toss them with chili powder, cumin, smoked paprika, garlic powder, salt, pepper, and lime juice. Let it marinate while you prep the vegetables—about 10 minutes is plenty.
  2. Sauté the Vegetables: Heat 1 tablespoon of oil in a large cast-iron or nonstick skillet over medium-high heat. Add the sliced onions and bell peppers, then sauté until they’re slightly charred and softened, about 5 to 7 minutes. Remove them from the skillet and set aside.
  3. Cook the Steak: In the same skillet, add the remaining tablespoon of oil. Add the marinated steak slices in a single layer. Let them sear without moving for 2 to 3 minutes, then stir and cook for another 2 to 3 minutes until just cooked through.
  4. Bring It All Together: Return the sautéed peppers and onions to the skillet and toss everything together. Let it all warm through for another minute or two, allowing the flavors to mingle.
  5. Serve & Enjoy: Spoon the sizzling skillet steak fajitas into crisp lettuce cups or low-carb tortillas. Top with avocado slices, sour cream, a sprinkle of cheese, or whatever your heart desires.
