- 2 slices whole grain bread
- 1 ripe avocado
- 1 tablespoon lemon juice

- 1 tablespoon olive oil
- 2 large eggs
- 1/4 teaspoon red pepper flakes
- Fresh herbs (like cilantro or parsley), for garnish
Instructions
- Toast the slices of whole grain bread until golden and crispy.
- Cut the avocado in half, remove the pit, and mash the flesh in a bowl with lemon juice, olive oil, salt, and pepper.
- In a medium saucepan, bring water to a simmer and poach the eggs for 3-4 minutes.
- Remove the poached eggs with a slotted spoon and drain on a paper towel.
- Spread a generous amount of the mashed avocado mixture onto each slice of toast.
- Place the poached egg on top of each piece of toast.
- Sprinkle with red pepper flakes and garnish with fresh herbs.
- Serve immediately while warm.
