Description

A refreshing dessert combining cream cheese and fresh fruit, drizzled with caramel and topped with granola.


Ingredients

  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping
  • 2 cups mixed fresh fruit (such as strawberries, blueberries, and diced peaches)
  • 1/2 cup caramel sauce
  • 1/2 cup granola
  • Optional: additional fruit for garnish

Instructions

  1. In a large mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract.
  2. Using a hand mixer or stand mixer, beat the mixture on medium speed until it is smooth and well combined.
  3. Gently fold in the whipped topping until fully incorporated, creating a creamy cheesecake filling.
  4. In a separate large bowl, combine the mixed fresh fruit. If you are using additional fruit for garnish, set aside a few pieces for later.
  5. Pour the cheesecake mixture over the mixed fruit and gently stir until the fruit is evenly coated with the creamy mixture.
  6. Drizzle half of the caramel sauce over the fruit and cheesecake mixture, and gently fold again to incorporate the caramel slightly.
  7. Transfer the salad to a serving dish or individual bowls for a prettier presentation.
  8. Sprinkle granola over the top for a delightful crunch.
  9. Drizzle remaining caramel sauce on top of the granola and salad for an extra sweet touch.
  10. Garnish with the reserved fruit pieces if desired.
  11. Serve immediately as a refreshing dessert or chill in the refrigerator for up to an hour before serving for a colder treat.
