Description

A delightful dessert featuring a light sponge cake filled with cherry cream and jam.


Ingredients

  • 4 large eggs
  • 100g (1/2 cup) granulated sugar
  • 100g (3/4 cup) all-purpose flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 200ml (3/4 cup) heavy cream
  • 50g (1/4 cup) powdered sugar
  • 200g (1 cup) cherries (fresh or canned), pitted
  • 2 tbsp cherry jam
  • 1 tbsp cornstarch
  • 2 tbsp water
  • Powdered sugar for dusting

Instructions

  1. Preheat and Prepare: Preheat your oven to 180°C (350°F). Line a baking tray (approx. 10×15 inches) with parchment paper.
  2. Make the Cake Batter: In a large bowl, beat the eggs and granulated sugar until thick and pale. Gently fold in the flour and baking powder along with the vanilla extract using a spatula until well combined.
  3. Bake the Cake: Pour the batter into the prepared baking tray, spreading evenly. Bake for 10-12 minutes, until the sponge is just golden and springs back when touched.
  4. Prepare the Cherry Filling: In a small saucepan, heat the cherries and cherry jam together on medium heat. Mix cornstarch with water and add to the cherries. Stir until thickened, then let cool.
  5. Prepare the Cream Filling: In a chilled bowl, whip the heavy cream with powdered sugar until stiff peaks form.
  6. Assemble the Swiss Roll: Once the cake is baked and slightly cooled, turn it onto a clean tea towel dusted with powdered sugar. Spread the whipped cream over the surface, leaving a small border. Evenly distribute the cherry mixture on top of the cream. Gently roll the cake from the short end into a tight log using the towel to assist.
  7. Chill: Wrap the roll in plastic wrap and refrigerate for at least 1 hour to set.
