- 4 large eggs
- 100g (1/2 cup) granulated sugar
- 100g (3/4 cup) all-purpose flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 200ml (3/4 cup) heavy cream
- 50g (1/4 cup) powdered sugar
- 200g (1 cup) cherries (fresh or canned), pitted
- 2 tbsp cherry jam
- 1 tbsp cornstarch
- 2 tbsp water
- Powdered sugar for dusting
Instructions
- Preheat and Prepare: Preheat your oven to 180°C (350°F). Line a baking tray (approx. 10×15 inches) with parchment paper.
- Make the Cake Batter: In a large bowl, beat the eggs and granulated sugar until thick and pale. Gently fold in the flour and baking powder along with the vanilla extract using a spatula until well combined.
- Bake the Cake: Pour the batter into the prepared baking tray, spreading evenly. Bake for 10-12 minutes, until the sponge is just golden and springs back when touched.
- Prepare the Cherry Filling: In a small saucepan, heat the cherries and cherry jam together on medium heat. Mix cornstarch with water and add to the cherries. Stir until thickened, then let cool.
- Prepare the Cream Filling: In a chilled bowl, whip the heavy cream with powdered sugar until stiff peaks form.
- Assemble the Swiss Roll: Once the cake is baked and slightly cooled, turn it onto a clean tea towel dusted with powdered sugar. Spread the whipped cream over the surface, leaving a small border. Evenly distribute the cherry mixture on top of the cream. Gently roll the cake from the short end into a tight log using the towel to assist.
- Chill: Wrap the roll in plastic wrap and refrigerate for at least 1 hour to set.
