Description
A delicious no-bake chocolate salami made from medjool dates, cocoa powder, and mixed nuts.
Ingredients
Scale
- 10 large medjool dates, pitted
- 3 tablespoons liquid coconut oil, not hot
- 1 1/2 tablespoons cocoa powder
- 1/2 cup mixed raw nuts (almonds, cashews, pistachios)
- 1/8 teaspoon salt
Instructions
- Into a food processor, place dates, cocoa powder, and melted coconut oil. Ensure the coconut oil is melted but not hot. This facilitates easier blending of the dates and allows them to absorb the oil without being greasy.
- Process for about 30 seconds, scrape down the sides of the processor, and continue processing for an additional 1 minute until it becomes very smooth.
- Transfer mixture into a medium bowl, add nuts and salt. Stir until evenly combined. Tip: Since almonds are much harder than the other nuts, I prefer giving them a rough chop before mixing. This ensures a more uniform distribution and makes slicing easier.
- Transfer the mixture onto a work surface and shape it into a thick log. Wrap it in parchment paper or plastic wrap and refrigerate for at least 6 hours or up to 2 days.
- Using a sharp knife, slice the chocolate salami into ¼ or ½ inch thick slices. Transfer into an airtight container and store it in the fridge. Tip: For the best texture, enjoy it cold, directly from the fridge.
Notes
- Ensure the coconut oil is melted but not hot for easier blending.
- Chop almonds before mixing for better distribution.
- Refrigerate for at least 6 hours or up to 2 days for proper setting.
