Description
A delicious stir-fried rice dish with mixed vegetables and aromatic seasonings.
Ingredients

- 1 cup jasmine or basmati rice
- 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
- 3 cloves garlic, minced
- 1/4 cup low-sodium soy sauce
- 2 tbsp sesame oil
- 1 tbsp fresh ginger, grated
Instructions
- Prepare the rice according to package instructions.
- Chop vegetables into bite-sized pieces.
- In a large skillet or wok, heat sesame oil over medium-high heat. Add garlic and ginger; sauté for about 1 minute until fragrant.
- Add chopped vegetables and stir-fry for 3-5 minutes until crisp-tender.
- Pour in soy sauce and mix well; simmer for an additional couple of minutes.
- Serve stir-fried veggies over rice, sprinkle with sesame seeds if desired, and enjoy.
Notes
- This dish can be customized with any variety of vegetables you have on hand.
- For added protein, consider adding tofu or chicken.
