Description

A delicious stir-fried rice dish with mixed vegetables and aromatic seasonings.


Ingredients

  • 1 cup jasmine or basmati rice
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
  • 3 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp fresh ginger, grated

Instructions

  1. Prepare the rice according to package instructions.
  2. Chop vegetables into bite-sized pieces.
  3. In a large skillet or wok, heat sesame oil over medium-high heat. Add garlic and ginger; sauté for about 1 minute until fragrant.
  4. Add chopped vegetables and stir-fry for 3-5 minutes until crisp-tender.
  5. Pour in soy sauce and mix well; simmer for an additional couple of minutes.
  6. Serve stir-fried veggies over rice, sprinkle with sesame seeds if desired, and enjoy.

Notes
