Description
A refreshing cabbage and spinach salad with a tangy dressing, perfect for serving with chips.
Ingredients
Scale
- 1/2 head cabbage
- 4 Persian cucumbers
- 5 green onions
- 2 cloves garlic
- 1 shallot
- juice of 2 lemons
- 1/4 cup chives
- 1/4 cup olive oil
- 1 tablespoon rice vinegar
- 1/4 cup walnuts
- 10–12 basil leaves
- 2 cups spinach
- 1/3 cup nutritional yeast
- to taste salt and pepper
- for serving chips
Instructions
- Finely dice the cabbage, cucumbers, and green onion. Add to a large bowl.
- In a blender or food processor, add the dressing ingredients.
- Blend until smooth and pour over the cabbage mixture.
- Stir together until everything is coated. Serve with tortilla chips or pita chips.
Notes
- For added crunch, feel free to include more nuts or seeds in the salad.
- This salad is great when made ahead of time, just keep the chips separate until serving.
