Description

A refreshing cabbage and spinach salad with a tangy dressing, perfect for serving with chips.


Ingredients

Scale
  • 1/2 head cabbage
  • 4 Persian cucumbers
  • 5 green onions
  • 2 cloves garlic
  • 1 shallot
  • juice of 2 lemons
  • 1/4 cup chives
  • 1/4 cup olive oil
  • 1 tablespoon rice vinegar
  • 1/4 cup walnuts
  • 1012 basil leaves
  • 2 cups spinach
  • 1/3 cup nutritional yeast
  • to taste salt and pepper
  • for serving chips

Instructions

  1. Finely dice the cabbage, cucumbers, and green onion. Add to a large bowl.
  2. In a blender or food processor, add the dressing ingredients.
  3. Blend until smooth and pour over the cabbage mixture.
  4. Stir together until everything is coated. Serve with tortilla chips or pita chips.

Notes

  • For added crunch, feel free to include more nuts or seeds in the salad.
  • This salad is great when made ahead of time, just keep the chips separate until serving.
