Description
Delicious Cajun chicken sandwiches topped with sautéed bell peppers and onions, served on toasted buns.
Ingredients

- 1 lb boneless, skinless chicken breasts
- 2 tbsp Cajun seasoning
- 1 medium bell pepper, diced
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- ½ cup ketchup
- 2 tbsp Worcestershire sauce
- ½ cup low-sodium chicken broth
- 4 hamburger or hoagie buns
Instructions
- Heat olive oil in a large skillet over medium heat. Cook the chicken breasts seasoned with half of the Cajun seasoning for about 5-7 minutes per side until golden brown. Remove from heat and shred.
- In the same skillet, sauté chopped onions and bell peppers for 3-4 minutes until soft. Add minced garlic and cook for another minute.
- Return shredded chicken to the skillet. Stir in ketchup, Worcestershire sauce, chicken broth, and remaining Cajun seasoning. Mix well.
- Lower heat and simmer for about 10 minutes to meld flavors.
- Serve on toasted buns with desired toppings.
Notes
- Feel free to adjust the spice level by adding more or less Cajun seasoning according to your taste.
- These sandwiches can be topped with your favorite condiments.
