Description

A classic Italian dessert made with layers of ladyfinger cookies soaked in espresso and mascarpone cheese.


Ingredients

  • 24 ladyfinger cookies
  • 2 cups strong brewed espresso (cooled)
  • 1 ½ cups mascarpone cheese (room temperature)
  • ¼ cup unsweetened cocoa powder (plus extra for dusting)
  • ½ cup granulated sugar
  • 2 tsp pure vanilla extract
  • 4 large eggs (separated)

Instructions

  1. Brew the espresso and gently fold into the mascarpone mixture.
  2. Quickly dip each ladyfinger into the cooled espresso and layer them in a dish.
  3. Spread half of the mascarpone mixture over the ladyfingers.
  4. Repeat with another layer of soaked ladyfingers followed by the remaining mascarpone mixture.
  5. Cover and refrigerate for at least 4 hours or overnight.
  6. Dust with cocoa powder before serving.

Notes

  • This dessert can be made a day in advance for better flavor.
  • Adjust the sweetness by adding more or less sugar based on your preference.
