- 4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 1 cup sun-dried tomatoes, chopped (preferably oil-packed)
- 1 cup heavy cream
- 1/2 cup fresh basil, chopped
- 1 cup low-sodium chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray. Season chicken breasts generously with salt and pepper.
- In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute).
- Add chopped sun-dried tomatoes to the garlic oil and cook for another 2 minutes.
- Pour in chicken broth and heavy cream while stirring; then add grated Parmesan cheese. Bring the mixture to a gentle simmer.
- Place seasoned chicken in the prepared baking dish and pour the creamy sauce over them.
- Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (75°C). Serve with extra sauce alongside pasta or crusty bread.
