Description

A comforting homemade soup with pastina, perfect for any occasion.


Ingredients

  • 1 cup onion (diced)
  • 1 cup carrots (diced)
  • 1 cup celery (diced)
  • 4 cups chicken or vegetable broth (homemade preferred)
  • 1 cup pastina (or small pasta shape)
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  2. Add diced onions, carrots, and celery; cook until softened, about 5 minutes.
  3. Pour in the broth, bring to a boil, then add the pastina. Cook for 7-10 minutes, or until the pasta is tender.
  4. Stir in fresh parsley just before serving, and adjust seasoning with salt and pepper to taste.
