Description
Deliciously moist and tangy lemon brownies topped with a zesty glaze.
Ingredients

- 1 cup granulated sugar
- 8 tablespoons unsalted butter (at room temperature)
- 2 large eggs (at room temperature)
- zest of 1 large lemon
- 4 tablespoons fresh lemon juice
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1 1/4 cups sifted powdered sugar
- 2 – 3 tablespoons lemon juice
Instructions
- Preheat the oven to 350°F. Lightly spray or butter an 8×8-inch baking pan.
- Using an electric hand mixer, cream the butter and sugar together in a large mixing bowl until light and fluffy.
- Mix in the eggs, one at a time.
- Mix in the lemon juice and zest. (Note: the batter may look curdled at this point, but that’s normal.)
- Stir in the salt and flour with a rubber spatula, stirring just until everything is well combined – don’t overmix!
- Spread the batter evenly into the prepared pan.
- Bake for 25-30 minutes or just until the center is set.
- Let the brownies cool in the pan on a wire rack.
- Once cooled, mix the powdered sugar and enough lemon juice in a small bowl to make a thick but pourable glaze.
- Spread the glaze evenly over the top of the completely cooled brownies.
- Allow the glaze to set before slicing.
Notes
- For the best flavor, use fresh lemon juice and zest.
- These brownies are best served chilled after the glaze has set.
