- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons dried culinary lavender, crushed
- 3/4 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 unit zest of 1 lemon
- 1 tablespoon juice of 1 lemon
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, and crushed lavender. Set aside.
- In a separate bowl, cream the softened butter and granulated sugar until light and fluffy.
- Beat in the egg, lemon zest, lemon juice, and vanilla extract until well combined.
- Gradually add the dry ingredient mixture to the butter mixture, mixing until just combined.
- Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheet, spacing them a few inches apart.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a stronger lavender flavor, increase the amount of crushed lavender.
- Make sure to use culinary-grade lavender only.
- These cookies pair well with tea or lemonade.
