Description

Delicious lavender and lemon cookies that are perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons dried culinary lavender, crushed
  • 3/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 unit zest of 1 lemon
  • 1 tablespoon juice of 1 lemon
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, and crushed lavender. Set aside.
  3. In a separate bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg, lemon zest, lemon juice, and vanilla extract until well combined.
  5. Gradually add the dry ingredient mixture to the butter mixture, mixing until just combined.
  6. Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheet, spacing them a few inches apart.
  7. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

  • For a stronger lavender flavor, increase the amount of crushed lavender.
