Description

A refreshing salad made with chopped Romaine lettuce and a zesty lemon citrus vinaigrette.


Ingredients

Scale
  • 2 heads Romaine lettuce, chopped
  • 1 cup Parmesan cheese, finely grated
  • 1/3 cup Lemon Citrus Vinaigrette
  • Freshly ground black pepper to taste
  • Juice of 1 lemon
  • Zest of 1/2 orange
  • 1 garlic clove
  • 1/3 cup extra-virgin olive oil
  • 23 tablespoons water
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Add the ingredients for the vinaigrette to a wide mouth mason jar and blend using an immersion blender (stick blender). You can also use a stand blender or food processor to blend the ingredients.
  2. Add the chopped lettuce to a bowl. Drizzle the dressing lightly over the salad and toss.
  3. Sprinkle grated Parmesan cheese over the top and toss again.
  4. Season with freshly ground black pepper to taste.

Notes

  • For a creamier vinaigrette, add a tablespoon of Greek yogurt.
  • Feel free to add other vegetables like tomatoes or cucumbers for extra crunch.
