Description
A refreshing salad made with chopped Romaine lettuce and a zesty lemon citrus vinaigrette.
Ingredients

- 2 heads Romaine lettuce, chopped
- 1 cup Parmesan cheese, finely grated
- 1/3 cup Lemon Citrus Vinaigrette
- Freshly ground black pepper to taste
- Juice of 1 lemon
- Zest of 1/2 orange
- 1 garlic clove
- 1/3 cup extra-virgin olive oil
- 2–3 tablespoons water
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Add the ingredients for the vinaigrette to a wide mouth mason jar and blend using an immersion blender (stick blender). You can also use a stand blender or food processor to blend the ingredients.
- Add the chopped lettuce to a bowl. Drizzle the dressing lightly over the salad and toss.
- Sprinkle grated Parmesan cheese over the top and toss again.
- Season with freshly ground black pepper to taste.
Notes
- For a creamier vinaigrette, add a tablespoon of Greek yogurt.
- Feel free to add other vegetables like tomatoes or cucumbers for extra crunch.
