Description
A delicious Indian street food combining spiced potato patties with soft pav buns served with chutney.

- 4 large potatoes (mashed)
- 1 large onion (chopped)
- 4 cloves garlic (minced)
- 1 tablespoon ginger paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (to taste)
- 1 teaspoon garam masala powder
- 1 teaspoon salt (to taste)
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 cup yogurt
- 1/2 cup water (adjust as needed)
- 2 cups veg oil (for frying)
- 4 buns pav
- 1/2 cup spiced chutney (for serving)
Instructions
- In a large mixing bowl, combine the mashed potatoes, chopped onion, minced garlic, ginger paste, cumin seeds, coriander powder, turmeric powder, red chili powder, garam masala powder, and salt. Mix well until thoroughly combined.
- Divide the mixture into 6-8 portions and shape each portion into a round ball. Then flatten slightly to create a patty shape, ensuring a perfect fit for your pav buns.
- In a separate bowl, mix together the all-purpose flour, baking soda, and a pinch of salt. Gradually add the yogurt and water to form a smooth batter that clings nicely to your patties.
- In a deep frying pan, heat the veg oil over medium heat. Once hot, dip each patty into the batter and gently drop it into the oil, frying until golden brown and crispy, about 3-4 minutes on each side. Drain on paper towels to remove excess oil.
- In a blender, combine chopped green chilies, cilantro, mint leaves, garlic, ginger paste, lemon juice, and salt. Blend until smooth, adding water as needed to achieve your desired consistency.
- Slice the pav buns in half and toast them lightly. Place a fried vada on the bottom half, add a generous dollop of Spiced Chutney, and cap with the top half of the bun. Serve immediately to enjoy the warmth and harmony of flavors!

- This recipe can be a bit spicy; adjust the red chili powder according to your taste.
