- 2 cups cooked salmon, flaked
- 1 cup breadcrumbs
- 2 eggs, beaten
- 1/2 cup onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup mayonnaise

- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (for frying)
Instructions
- Prepare the Mixture: In a large bowl, combine the flaked salmon and breadcrumbs. Add the beaten eggs and mix well.
- Add Seasonings: Stir in the onion, parsley, mayonnaise, lemon juice, and Dijon mustard. Season with garlic powder, salt, and pepper. Mix until fully combined.
- Form Patties: Shape the mixture into patties, about 3 inches wide and 1/2 inch thick. Place them on a plate and refrigerate for about 15 minutes to firm up.
- Cook the Patties: Heat olive oil in a large skillet over medium heat. Add the patties and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
- Serve: Remove from the skillet and place on a paper towel-lined plate to drain any excess oil. Serve hot with lemon wedges on the side.
Notes
- If the mixture is too dry, add a little more mayonnaise or a splash of milk.
- For a spicier kick, add a pinch of cayenne pepper to the mixture.
- These patties can also be baked at 375°F (190°C) for 15-20 minutes, flipping halfway through, for a healthier option.
- Consider adding chopped green onions or dill for extra flavor.
