Description
Deliciously spicy chicken bites coated in crispy breading and crushed spicy chips, perfect for serving with ranch or blue cheese dressing.
Ingredients
Scale
- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup buttermilk
- 1 cup hot sauce (such as Frank’s Red Hot)
- 2 cups all-purpose flour
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 cups crushed spicy red hot chips (e.g., Flamin’ Hot Cheetos)
- Oil for frying
- Ranch or blue cheese dressing for serving
Instructions
- Marinade the Chicken:
In a large bowl, combine the buttermilk and hot sauce. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, preferably overnight. - Prepare Breading:
In a shallow bowl, mix the flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper. In another shallow bowl, place the crushed spicy red hot chips. - Coat the Chicken:
Remove chicken from the marinade, allowing excess to drip off. Dredge each piece in the flour mixture, shaking off excess. Dip them back in the buttermilk mixture, then coat with the crushed chips, pressing gently to adhere. - Fry the Chicken:
In a large skillet or deep fryer, heat oil to 350°F (175°C). Fry chicken in batches for 6-8 minutes until golden brown and fully cooked. Remove and drain on paper towels.
Notes
- For extra heat, add more cayenne pepper to the flour mixture.
- Ensure oil is at the correct temperature for crispy bites.
- Serve with cooling dips like ranch or blue cheese to balance the spiciness.
- For a healthier version, bake in a preheated oven at 400°F (200°C) for 15-20 minutes until crispy.
