Description
Warm, comforting, and satisfying potato tots made with cottage cheese.
Ingredients
- 1 ½ cups cooked and mashed potatoes (preferably cold)
- 1 cup cottage cheese (small curd or blended for smoother texture)
Instructions
-
Start with cooked and cooled mashed potatoes. You can use leftovers from dinner, or boil fresh potatoes and mash them simply with a pinch of salt — no butter or cream needed. Cold mashed potatoes work best because they hold their shape better.
-
In a mixing bowl, combine the mashed potatoes with cottage cheese. For a smoother texture, you can blend the cottage cheese before mixing. Stir until the mixture is well combined and forms a sticky but moldable dough.
-
Using your hands, scoop out small portions and roll them into tot shapes — about the size of a large marble. You can also make mini patties if you prefer. Place them on a parchment-lined baking sheet, giving each one a little space to crisp up.
-
Bake at 400°F (200°C) for 25–30 minutes, flipping them halfway through, until the tots are golden brown and crispy on the edges.
-
Let them cool slightly before serving. Pair with ketchup, yogurt dip, or even a dash of hot sauce. They’re perfect just as they are!
Notes
- These tots can be made in advance and frozen for later use.
- Serve with a variety of dips for a fun snack or appetizer.
