Description

Delicious vegan enchiladas made with fresh tortillas and hearty ingredients.


Ingredients

Scale
  • 4 fresh flour tortillas
  • 1 tablespoon plain vegetable oil
  • 1 can vegan refried beans
  • 2 tablespoons jarred salsa
  • Hot sauce (to taste)
  • 1 can enchilada sauce
  • 1 pack vegan ground beef
  • Taco seasoning (to taste)
  • Vegan cheddar or Monterey Jack cheese, shredded
  • Toppings: fresh diced tomatoes, green onions, or black olives

Instructions

  1. Heat the oil in a pan.
  2. Brown the tortillas in the hot pan until golden brown on each side.
  3. Sauté the vegan ground beef with taco seasoning until browned.
  4. Layer two tortillas in a baking pan, spread refried beans, then add sautéed ground beef.
  5. Pour enchilada sauce over the layers and sprinkle with vegan cheese.
  6. Bake in a preheated oven at 350°F for about 10 minutes until the cheese is melted and bubbly.
