Ingredients

- 4 fresh flour tortillas
- 1 tablespoon plain vegetable oil
- 1 can vegan refried beans
- 2 tablespoons jarred salsa
- Hot sauce (to taste)
- 1 can enchilada sauce
- 1 pack vegan ground beef
- Taco seasoning (to taste)
- Vegan cheddar or Monterey Jack cheese, shredded
- Toppings: fresh diced tomatoes, green onions, or black olives
Instructions
- Heat the oil in a pan.
- Brown the tortillas in the hot pan until golden brown on each side.
- Sauté the vegan ground beef with taco seasoning until browned.
- Layer two tortillas in a baking pan, spread refried beans, then add sautéed ground beef.
- Pour enchilada sauce over the layers and sprinkle with vegan cheese.
- Bake in a preheated oven at 350°F for about 10 minutes until the cheese is melted and bubbly.
Notes
- For extra flavor, you can add more spices to the ground beef.
