Description

Ingredients

  • 2 slices whole grain bread
  • 1 ripe avocado
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 large eggs
  • 1/4 teaspoon red pepper flakes
  • Fresh herbs (like cilantro or parsley), for garnish

Instructions

  1. Toast the slices of whole grain bread until golden and crispy.
  2. Cut the avocado in half, remove the pit, and mash the flesh in a bowl with lemon juice, olive oil, salt, and pepper.
  3. In a medium saucepan, bring water to a simmer and poach the eggs for 3-4 minutes.
  4. Remove the poached eggs with a slotted spoon and drain on a paper towel.
  5. Spread a generous amount of the mashed avocado mixture onto each slice of toast.
  6. Place the poached egg on top of each piece of toast.
  7. Sprinkle with red pepper flakes and garnish with fresh herbs.
  8. Serve immediately while warm.
