Description

Ingredients

  • 2 cups Fresh blueberries
  • 1 cup Milk (Whole or 2%)
  • 3 large Eggs
  • 1/2 cup Granulated sugar
  • 1 tablespoon Lemon zest
  • 1/4 cup Lemon juice (Freshly squeezed)
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a mixing bowl, whisk together the milk, eggs, sugar, lemon zest, lemon juice, vanilla extract, and baking powder until well combined.
  3. Layer the quartered waffles in the greased baking dish and sprinkle the blueberries evenly over the top.
  4. Pour the egg mixture over the waffles and blueberries, ensuring even coverage.
  5. Let it sit for about 10 minutes to allow the waffles to soak up the mixture.
  6. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the center is set.
