Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a 10×15 inch jelly roll pan with parchment paper.
- Prepare the Cake Batter: In a medium bowl, whisk together the flour, baking powder, cinnamon, ginger, nutmeg, and salt. In a large bowl, beat the eggs and granulated sugar until thick and creamy. Stir in the vanilla extract. Gently fold in the dry ingredients until just combined. Fold in the grated carrots.

- Assemble the Cake Roll: Gently unroll the cooled cake and spread the frosting evenly over the surface. Roll the cake back up, peeling away the parchment paper as you go.
- Finishing Touch: Frost the outside of the roll and sprinkle with crushed walnuts or pecans if desired.
