Description

A delicious twist on lasagna combining all the flavors of beef tacos.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 912 sheets lasagna noodles
  • 2 cups shredded cheddar cheese
  • 2 cups shredded mozzarella cheese
  • 1 can (14 oz) diced tomatoes with green chilies
  • 1 tablespoon olive oil
  • 1 medium diced onion
  • 2 cloves minced garlic
  • 1 cup salsa
  • 1/2 cup sour cream
  • Fresh cilantro (for garnish)
  • Sliced jalapeños (optional for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Cook the Beef:
    • Heat olive oil in a large skillet over medium heat.
    • Add diced onion and garlic, sauté until translucent.
    • Add ground beef; cook until browned.
    • Stir in taco seasoning and diced tomatoes with green chilies. Simmer for 5 minutes.
  3. Prepare Noodles:
    • Cook lasagna noodles according to package instructions. Drain and set aside.
  4. Assemble the Lasagna:
    • In a baking dish, spread a thin layer of salsa on the bottom.
    • Place a layer of lasagna noodles over the salsa.
    • Spread a portion of the beef mixture over the noodles.
    • Sprinkle with cheddar and mozzarella cheese.
    • Repeat the layers until all ingredients are used, finishing with a generous layer of cheese on top.
  5. Bake:
    • Cover with aluminum foil and bake for 25 minutes.
    • Remove foil and bake for an additional 10 minutes, or until cheese is bubbly and golden.
  6. Serve:
    • Let the lasagna cool for a few minutes before slicing.
    • Garnish with sour cream, chopped cilantro, and optional jalapeños.

Notes

  • For extra flavor, consider adding a layer of refried beans or black beans.
  • Use a mix of cheeses for more depth in flavor.
  • Adjust the heat level by adding more or less jalapeños and adjusting the taco seasoning to your taste.
  • Letting the lasagna rest for a few minutes before slicing will help it hold its shape better.
