Description
A delicious and easy taco bowl made with lean ground beef, fresh vegetables, and cottage cheese.
Ingredients

- 1 lb. lean ground beef
- 1 T olive oil
- 2 tsp. Taco Seasoning
- 2 tsp. Spike Seasoning (or Salt-Free Spike Seasoning)
- black pepper to taste
- 1 T zero-carb hot sauce
- 1 cup water
- 1 1/2 cup cottage cheese
- 1 cup cherry tomatoes, cut in half
- 2 small avocados, diced
Instructions
- Heat olive oil in a large frying pan over medium heat. Add ground beef and break apart as it starts to cook.
- Cook, turning often, until all the ground beef is nicely browned.
- Add Taco Seasoning, Spike Seasoning, black pepper, zero-sugar hot sauce, and water.
- Let the meat come to a simmer over low heat until all the water is evaporated, stirring a few times.
- While the taco meat cooks, prepare other ingredients. Measure out cottage cheese, cut cherry tomatoes in half, and dice avocados.
- When ready to assemble, quickly build bowls while the meat is hot, using ground beef, diced tomatoes, chopped avocado, and cottage cheese.
- Serve right away with your favorite toppings for tacos.
Notes
- For the best flavor, use your favorite taco seasoning or make your own.
- If not consuming all ingredients immediately, only cut up as much tomato and avocado as needed.
