Ingredients

  • 2 large eggs
  • 1 cup panko breadcrumbs

  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt, pepper, garlic powder, onion powder, and paprika. Place the flour in a shallow dish, and season with salt and pepper. In a second shallow dish, beat the eggs. In a third shallow dish, place the panko breadcrumbs.
  2. Bread the Chicken: Dredge each chicken breast in the flour, shaking off excess. Dip in beaten eggs, ensuring even coating. Press into panko breadcrumbs to coat thoroughly.
  3. Fry the Chicken: Heat olive oil in a frying pan over medium heat. Fry the chicken breasts until golden brown and cooked through, about 6-8 minutes per side. Remove and place on paper towels to drain excess oil.
  4. Make the Creamy Sauce: In a saucepan, melt butter and sauté garlic until fragrant. Stir in flour and cook for 1 minute, forming a roux. Slowly whisk in chicken broth until smooth. Add heavy cream, salt, and pepper, and simmer until thickened.
  5. Assemble the Dish: Slice the crispy chicken into strips. Pour the creamy sauce over the chicken. Garnish with chopped fresh parsley.

  • For extra crispiness, double-fry the chicken by giving it a second, shorter fry.
