Description

A delicious treat that combines vanilla wafers, nuts, cocoa, and bourbon, all wrapped in a chocolate coating.


Ingredients

  • 2 cups crushed vanilla wafers
  • 1 cup finely chopped pecans (or walnuts)
  • 1 cup powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup bourbon
  • 1/4 cup unsweetened shredded coconut (optional)
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil (or vegetable oil)
  • Extra chopped nuts for rolling (optional)

Instructions

  1. In a large mixing bowl, combine the crushed vanilla wafers, chopped pecans, powdered sugar, and cocoa powder. Mix well until all dry ingredients are evenly incorporated.
  2. Gradually add in the bourbon while stirring the mixture until it begins to hold together. If you’re using shredded coconut, you can mix it in at this point.
  3. Once the mixture is uniform, cover the bowl with plastic wrap and refrigerate for about 30 minutes to firm up.
  4. After chilling, use your hands to form small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  5. Meanwhile, in a microwave-safe bowl, combine the semi-sweet chocolate chips with the coconut oil. Microwave in 20-second intervals, stirring in between, until the chocolate is fully melted and smooth.
  6. Dip each bourbon ball into the melted chocolate, making sure it’s completely coated. Use a fork to lift the ball out, allowing any excess chocolate to drip back into the bowl.
  7. Place the chocolate-dipped balls back onto the parchment-lined baking sheet. If desired, roll the balls in additional chopped nuts before the chocolate sets.
  8. Once all the balls are dipped, refrigerate the tray for about 15-20 minutes to allow the chocolate to harden completely.
  9. Serve the bourbon balls chilled or at room temperature for the best flavor and texture.
