Description

A flavorful and aromatic lemon garlic rice dish that’s perfect as a side or light main course.


Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 3 tablespoons butter (unsalted)
  • 3 cloves garlic (minced)
  • 1 lemon (zest)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 tablespoon fresh parsley (chopped)
  • 1 tablespoon fresh chives (chopped)
  • 1 tablespoon fresh dill (chopped)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a medium saucepan, combine the rice, water, and salt. Bring to a boil over high heat.
  2. Once boiling, reduce the heat to low, cover, and simmer for 15-18 minutes or until the rice is tender and water is absorbed.
  3. In a separate pan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Stir in the lemon zest and lemon juice, cooking for another minute.
  5. Once the rice is cooked, fluff it with a fork and pour the lemon garlic butter mixture over the rice.
  6. Add the chopped herbs and black pepper, mixing gently to combine all ingredients.
  7. Serve warm as a side dish or light main course.

Notes

  • For extra flavor, you can add additional herbs to the rice.
