Description

This Spicy Beef and Cabbage Bowl is a flavorful and hearty dish featuring tender beef chuck roast seasoned with taco seasoning, paired with a fresh cabbage slaw and an avocado salsa.


Ingredients

  • 3 lb. beef chuck roast
  • 1 T Kalyn’s Taco Seasoning
  • 2 tsp. olive oil
  • 2 cans (4 oz. can) diced green chiles with juice
  • 1 small head green cabbage
  • 1/2 small head red cabbage
  • 1/2 cup thinly sliced green onion
  • 6 T mayo
  • 4 tsp. fresh squeezed lime juice
  • 2 tsp. Green Tabasco Sauce
  • 2 large avocados, diced
  • 1 medium Poblano (Pasilla) pepper, diced very small
  • 1 T fresh-squeezed lime juice
  • 1 T extra-virgin olive oil
  • 1/2 cup finely chopped cilantro

Instructions

  1. Trim all visible fat and any undesirable parts from the chuck roast and cut into thick strips. Save scraps for homemade beef stock.
  2. Rub strips of beef with taco seasoning. Heat oil in a large frying pan and brown beef well on all sides.
  3. Put the browned beef strips in a slow cooker; pour in diced green chiles and juice.
  4. Cook on high for 3-4 hours, or until beef shreds apart easily. Alternatively, cook on low for 6-8 hours.
  5. Once beef is done, remove it to a cutting board, leaving liquid in the slow cooker. Shred beef with two forks and return to slow cooker to absorb liquid and keep warm.
  6. Cut cabbage into very thin strips. Use a Mandoline Slicer or cut by hand. Slice green onions.
  7. Whisk together mayo, lime juice, and Green Tabasco Sauce to make the dressing. Taste and adjust as necessary.
  8. Combine cabbage and green onions in a bowl and toss with dressing.
  9. Peel and chop avocado, toss with lime juice; combine with chopped cilantro and Poblano chile. Drizzle with olive oil and toss gently.
  10. Assemble the bowl starting with slaw, followed by a generous amount of spicy beef, topped with avocado salsa. Serve with extra Green Tabasco if desired.

Notes

  • Adjust taco seasoning according to preference.

  • Only dress the amount of cabbage you’ll be using for leftovers; refrigerate separately, and warm beef when ready to serve.
