Description

Delicious homemade oatmeal cookies with a variety of textures and a sweet icing drizzle.


Ingredients

  • 2 cups old fashioned rolled oats
  • 2 cups all-purpose flour (spoon and leveled)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 ½ teaspoons cinnamon
  • ½ teaspoon ground nutmeg
  • 1 cup unsalted butter (at room temperature)
  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat oven to 350 degrees and line baking sheets with parchment paper or baking mats.
  2. Pulse the oatmeal in a food processor 10 times. (You want a variety of textures)
  3. In a medium bowl, add the pulsed oatmeal, flour, baking soda, salt, cinnamon, and nutmeg and whisk until combined.
  4. In a large bowl using a hand mixer, beat the softened butter and sugars until creamy. Add in the eggs and vanilla and mix just until combined.
  5. Add the dry ingredients to the wet ingredients and mix until combined.
  6. Scoop about 2 tablespoons of the dough and roll into balls, then place on the baking sheet.
  7. Bake for 11-12 minutes, let cool, and remove to a cooling rack.
  8. In a small bowl, whisk together the powdered sugar and milk until combined. If it’s too thick, add a little more milk until desired consistency.
  9. Lightly dip the top of the cookies into the icing and place them back on the cooling rack to dry.

Notes

  • Store cookies in an airtight container to keep them fresh.
  • If desired, add chocolate chips or nuts for extra flavor.
