Honey Lime Chicken with Rice and Avocado

Description

A delicious and easy recipe for honey lime chicken served over fluffy rice with avocado.


Ingredients

Scale
  • 1 cup white rice
  • 1 cup water
  • 1 tbsp butter
  • pinch salt
  • 1 lb chicken breasts (pat dry)
  • 2 tbsp honey
  • 1 lime (zest and juice)
  • 1 tbsp olive oil
  • to taste salt and pepper
  • 1 avocado (diced)
  • 1/4 cup cilantro (chopped)

Instructions

  1. Combine rice, water, butter, and a pinch of salt in a saucepan. Bring to a boil, cover, reduce heat and simmer for 18 minutes. Remove from heat and let rest, covered, for 5 minutes.
  2. Whisk honey, lime zest and juice, olive oil, salt, and pepper in a bowl. Add chicken and turn to coat fully.
  3. Heat a skillet over medium heat. Cook chicken 6–8 minutes per side until golden and cooked through (165°F internal). Transfer to a cutting board and let rest for 5 minutes.
  4. Fluff the rice and stir in any remaining lime zest and juice. Layer rice onto plates, top with sliced chicken, diced avocado, and chopped cilantro. Drizzle with leftover glaze.
