Description

A hearty chickpeas stew that’s simple to prepare and packed with flavor.


Ingredients

Scale
  • 1 pound dried chickpeas
  • 6 cups water
  • 1/4 cup olive oil
  • 1 onion (sliced thin)
  • 4 garlic cloves (sliced or smashed)
  • 1 bay leaf
  • 1/4 teaspoon ground turmeric
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon fresh ground pepper

Instructions

  1. Rinse the chickpeas in a colander.
  2. Place in a large saucepan and cover with 6 cups of water.
  3. Add onion and garlic, along with the olive oil and bay leaf. Season with salt and pepper.
  4. Bring the pot to a boil, lower to simmer. Stir occasionally, adding additional water if needed.
  5. Cook for 2 hours or until chickpeas are tender.
  6. Remove from heat and discard the bay leaf.

Notes

  • For added flavor, consider adding spices such as cumin or paprika.
