Ingredients

- 2 cups rolled oats
- 2 cups milk (dairy or non-dairy, almond milk works well)
- 1 cup Greek yogurt (optional for creaminess)
- 1/4 cup honey or maple syrup (adjust to taste)
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest (freshly grated)
- 1/4 cup lemon juice (freshly squeezed)
- 1 cup fresh raspberries (can substitute with frozen)
- 1 tablespoon chia seeds (optional for added texture)
Instructions
- In a mixing bowl, combine rolled oats, milk, Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until well combined.
- Add lemon zest and lemon juice to the mixture and stir until evenly distributed.
- Divide the oat mixture evenly among 4 jars or containers.
- Top each jar with fresh raspberries and sprinkle with chia seeds if using.
- Seal the jars with lids and refrigerate overnight (or at least 4 hours) to allow the oats to soak and flavors to meld.
- Enjoy chilled or at room temperature, adding additional toppings if desired.
Notes
- Overnight oats can be made in advance for a convenient breakfast option.
- Feel free to adjust the sweetness by adding more or less honey/maple syrup.
