A delicious and hearty beef sausage dish baked with vegetables and herbs.

- 6 beef sausages
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 1 red bell pepper, diced
- 2 celery sticks, chopped
- 400g (14 oz) canned chopped tomatoes
- 250ml (1 cup) beef stock
- 1 tablespoon Worcestershire sauce
- 1 tablespoon tomato puree
- 1 teaspoon dried mixed herbs (thyme, oregano, and basil)
- Salt and pepper, to taste
- Fresh parsley, to garnish (optional)
Instructions
- Preheat your oven to 180°C (350°F).
- In a large ovenproof pot, heat the olive oil over medium heat. Add the beef sausages and cook until browned on all sides. Remove and set aside.
- In the same pot, add the chopped onion, garlic, carrots, bell pepper, and celery. Sauté for about 5-7 minutes until softened.
- Stir in the canned chopped tomatoes and beef stock, mixing well to incorporate.
- Add the Worcestershire sauce, tomato puree, dried mixed herbs, salt, and pepper. Stir to combine all the flavors.
- Return the browned sausages to the pot, ensuring they are submerged in the sauce.
- Cover the pot with a lid or foil and place it in the preheated oven. Bake for 45 minutes, allowing flavors to meld together and the sausages to cook through.
- After baking, check that the sausages are cooked through and the sauce has thickened to your liking. If it’s too runny, return to the oven uncovered for an additional 15 minutes.
- Once ready, remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.

- This dish can be served with crusty bread or over mashed potatoes.
