Description

A flavorful chicken stir fry with a sweet and spicy sauce, perfect for serving over rice or noodles.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup pineapple chunks (fresh or canned)
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Chopped green onions for garnish

Instructions

  1. Start by cutting the chicken breast into bite-sized pieces.
  2. In a mixing bowl, add soy sauce, honey, rice vinegar, minced garlic, ginger, and red pepper flakes. Whisk until combined.
  3. In a separate small bowl, mix cornstarch with a tablespoon of water until smooth. Add it to the sauce mixture, ensuring it is well blended.
  4. In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken pieces and sauté until they are golden and cooked through, about 5-7 minutes.
  5. Stir in the pineapple chunks and pour the sauce over the chicken. Cook for an additional 5 minutes, stirring frequently, until the sauce thickens and coats the chicken beautifully.
  6. Turn off the heat and garnish with chopped green onions. Serve over steamed rice or noodles.

Notes

  • This recipe can also be made with turkey or tofu instead of chicken.
  • Feel free to adjust the amount of red pepper flakes for more or less heat.
  • Chopped green onions add freshness and color to the dish.
