Delicious pumpkin bars with chocolate chips, perfect for fall!

- 1 cup canned pumpkin puree
- 1/2 cup light brown sugar
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs (room temperature)
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 cup semi-sweet chocolate chips
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
- In a medium bowl, mix melted butter, brown sugar, granulated sugar, and pumpkin puree until smooth. Add eggs one at a time along with vanilla extract.
- In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
- Gradually combine the dry ingredients into the wet mixture until just combined; fold in chocolate chips gently.
- Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes or until a toothpick comes out clean.
- Allow to cool for about ten minutes before transferring to a wire rack. Cut into squares and serve warm.
Notes
- Make sure to use room temperature eggs for better mixing.
- These bars can be stored in an airtight container for up to a week.
