- 2 tablespoons Olive oil
- 2 cloves Garlic (minced)
- zest from 1 lemon Lemon zest
- 2 tablespoons Lemon juice (freshly squeezed)
- 1/2 cup Heavy cream
- 3 tablespoons Fresh dill (chopped)
- optional Cooked grain or rice
- to taste Veggies of choice (like steamed broccoli or sautéed spinach)
Instructions
- Season the chicken breasts generously with salt and pepper.
- In a large skillet over medium heat, add the olive oil.
- Once hot, place the chicken breasts in the pan and cook for about 6-7 minutes on each side until cooked through and golden brown.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
- Stir in the lemon zest, lemon juice, and heavy cream, bringing the mixture to a gentle simmer.
- Add the cooked chicken back to the skillet and sprinkle with fresh dill.
- Let it simmer in the sauce for an additional minute or two.
- In a bowl, place a scoop of cooked grain or rice if you’d like, then top with the lemon-dill chicken and a drizzle of the creamy sauce.
- Add your choice of veggies to complete the bowl, and enjoy!
