Description

This Lemon-Dill Chicken is a delicious and creamy dish that pairs well with your choice of grain and veggies.


Ingredients

  • 1 pound Chicken breasts
  • to taste Salt and pepper
  • 2 tablespoons Olive oil
  • 2 cloves Garlic (minced)
  • zest from 1 lemon Lemon zest
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 1/2 cup Heavy cream
  • 3 tablespoons Fresh dill (chopped)
  • optional Cooked grain or rice
  • to taste Veggies of choice (like steamed broccoli or sautéed spinach)

Instructions

  1. Season the chicken breasts generously with salt and pepper.
  2. In a large skillet over medium heat, add the olive oil.
  3. Once hot, place the chicken breasts in the pan and cook for about 6-7 minutes on each side until cooked through and golden brown.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  6. Stir in the lemon zest, lemon juice, and heavy cream, bringing the mixture to a gentle simmer.
  7. Add the cooked chicken back to the skillet and sprinkle with fresh dill.
  8. Let it simmer in the sauce for an additional minute or two.
  9. In a bowl, place a scoop of cooked grain or rice if you’d like, then top with the lemon-dill chicken and a drizzle of the creamy sauce.
  10. Add your choice of veggies to complete the bowl, and enjoy!
