Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream the Butter and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy.
- Add Eggs and Vanilla: Beat in the eggs one at a time. Stir in the vanilla extract.
- Mix the Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the creamed butter mixture. Mix until well incorporated.
- Add Fillings: Fold in white chocolate chips, dried cranberries, and pecans (if using). Mix until evenly distributed.
- Shape the Cookies: Drop rounded tablespoons of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked but will set as they cool.
- Cool: Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
